Homemade Ratatouille Pizza

My oldest daughter has loved Ratatouille since the year it came out. She was inspired to take Young Chef classes and loved helping out in the kitchen. Today she is a chef for the military as an Army soldier. Meeting Remy in 2007 was a memory she will never forget.

The best part of this pizza is the crust. Instead of boring pizza crust, we used pre-made croissant crust. I purchased two packages of the rolled sheet croissant dough. Each package rolled out to cover a baking sheet.

To make our flaky croissant crust taste like an authentic pizza, I added garlic powder, basil, and oregano.

Then spoon on some tomato basil sauce. I purchased a jar from the spaghetti aisle.

We evenly spread a small amount of mozzarella cheese on top of the sauce.

Now comes the fun part! Let the kids get excited about eating their veggies by making your pizza look like Ratatouille that Remy bakes. You want to cut your squash and zucchini as thin as possible. I used a veggie slicer to make it quick.

As you lay your veggies down for your pizza topping, overlap them to give the spiral look from Ratatouille.

We added a few thin slices of red bell pepper and sprinkled a little more cheese on top, not too much. I also added a dash of black pepper over the top before baking.

Bake your pizza in the oven on 375º for 20 minutes, or until your crust is golden brown.
