Chocolate Peanut Butter Wafer Cookies for Santa

We love the holidays in our home. There are so many traditions we take part in each year. From writing Santa letters to burn in the fireplace to making delicious treats that are simple for the kids to create, the holidays are filled with family bonding time. This week while the kids were out of school on break we made these yummy chocolate peanut butter wafer cookies.

Chocolate Peanut Butter Wafer Cookies

Peanut butter is a daily staple in our home. Part of our family are die hard creamy peanut butter fans and the other half enjoys a little crunch. Peter Pan Simply Ground™ provides the best of both worlds and is a peanut butter we can all agree on.  It provides a great texture while not too crunchy.

While shopping at Walmart for our Thanksgiving menu items, I picked up my ingredients to make our cookie sandwiches.

These easy no-bake chocolate peanut butter wafer cookies are fun to make for the kids. We even added sprinkles!

Chocolate Peanut Butter Wafer Cookies Ingredients

  • NILLA Wafers
  • Peter Pan Simply Ground™
  • Semi-Sweet Chocolate Chips
  • Sprinkles – optional

First, spread the peanut butter evenly on the bottom of a NILLA wafer. To make a cookie sandwich you want to match the wafers against each other on the bottoms. This way they lay sandwiched together evenly.

You can add as much or as little peanut butter as you wish.  Slightly push the two NILLA wafers together enough to hold into place without squeezing the Simply Ground™ out the sides.

Once you get all of your NILLA wafer and Simply Ground™ sandwiches put together, sit aside.

Now it’s time to melt some chocolate!

You can melt your chocolate chips in the microwave or on the stove-top with a little oil in the pot. Stir frequently until it is very smooth for dipping.

Dip your cookie sandwiches into the chocolate and let the kids add sprinkles before the chocolate cools. It’ll get messy, but that is part of the fun!

After your chocolate peanut butter wafer cookies are nice and cool the chocolate will harden. Now it is time to move to a serving plate and enjoy!

Holiday treats are not complete without a cup of Swiss Miss hot cocoa. My kids love Swiss Miss® so much that they learned how to make their own cup of hot cocoa at a very young age. My 10-year-old son even surprises me with a cup some evenings while watching Christmas movies. He loves that he can make a special cup just for me all by himself.

We always buy the Swiss Miss® with marshmallows. If you enjoy it extra creamy, add milk instead of water. That’s my favorite way to drink it. However when the kids are making their cup, they just use water as hot as they can get, then stir in their packet.

Serve Santa something new this Christmas. Instead of sitting out plain cookies, let the kids get involved. These no-bake Santa cookies are perfect to make on Christmas Eve and you can quickly make a large batch so you have extras to enjoy while celebrating the holidays with family.
