Grilled Chicken Street Tacos with Strawberry Salsa

Summer is my favorite time of the year. The kids are out of school and we are ready for fun in the sun. We love hosting pool parties and finding any excuse to have friends and family over for a cookout. Today, I’m sharing a favorite summer recipe – Grilled Chicken Street Tacos with Strawberry Salsa.

Are you a fan of cilantro? People usually either love it or hate it. Our family loves it. If you hate cilantro I’ve seen a similar recipe using mint.

Grilled Chicken Street Tacos Marinade

First, you need to make your chicken marinade. I recommend marinating your chicken the night before, but if you are in a hurry like I usually am, then an hour before will suffice. Marinate your chicken and then make your homemade strawberry salsa while your chicken soaks.

For my marinade, I used fresh chopped cilantro, balsamic vinegar, honey, garlic, salt, pepper and Mazola® Corn Oil as the base. I cut the chicken breasts into small chunks for street tacos and then mixed them into the marinade. Once your chicken is fully coated, place in the refrigerator to soak.

I love using Mazola Corn Oil as a base for my marinade since it has a neutral taste that allows the added seasonings, herbs and natural flavor of my food to stand out.

Ingredients

  • 1/4 cup corn oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons garlic powder
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Chop your fresh cilantro.
  2. Mix together your oil, balsamic vinegar, and honey.
  3. Add in your dry ingredients: salt, pepper and garlic powder, stir.
  4. Toss in your chopped cilantro and mix well.
  5. Dice your chicken for your street tacos and place in a mixing bowl with your marinade, coat fully.
  6. Refrigerate the chicken for up to 24 hours.
  7. After grilling your chicken, serve topped with homemade strawberry salsa.

Not only do I use corn oil as the base for my marinade, but we also use it to grease the flat-top grill before putting down the chicken.

Mazola has a smoke point higher than most cooking oils at 450°F and performs well in a variety of cooking applications. Many home cooks may not realize that all cooking oils have a smoke point that, once exceeded, not only negatively affect the food’s flavor and nutritional value.

If you do not have a flat-top grill, no worries! You can grill your chicken breast whole and slice for serving in your street tacos.

To keep this summer recipe lighter, I replaced the traditional soft flour tortillas with corn tortillas. Instead of using butter to heat the corn tortillas, I used Mazola Corn Oil, and I swapped shredded cheese with fresh, homemade strawberry salsa.

If you love spicy and sweet, then you will love this strawberry salsa. Even my teens couldn’t get enough. I know I will be making batches of it all summer long. This quick and easy strawberry salsa uses red onion, jalapeños, balsamic vinegar, honey, brown sugar, salt, pepper, cilantro, corn oil, and fresh strawberries.

Homemade Strawberry Salsa

Ingredients

  • 1/2 red onion
  • 2 small jalapeños
  • 1/4 cup chopped fresh cilantro
  • 2 cups diced strawberries
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon corn oil
  • 1 teaspoon honey
  • 1-3 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Deseed your jalapeños.
  2. Dice your jalapeños, red onion and strawberries.
  3. Chop your rest cilantro.
  4. Mix your corn oil, balsamic vinegar, and honey together.
  5. Add in your salt and pepper.
  6. Add one tablespoon of brown sugar.
  7. Stir in your jalapeños, onion and strawberries to your oil mixture.
  8. Once your strawberry salsa is fully mixed, taste to gauge heat.
  9. If your salsa is too spicy, add more brown sugar to level it out.

Adjusting the heat on your strawberry salsa can easily be done using brown sugar to level it out. I love the sweetness of the strawberries mixed with the bitterness of the balsamic vinegar and spiciness of the jalapeños. This is my favorite salsa recipe!
