Chicken Broccoli Macaroni and Cheese Recipe

My kids could live off of macaroni and cheese. I don’t blame them, cheese is my weakness. I would rather eat cheese than any dessert! I love finding ways to incorporate a dish they love with a meal I can approve of. That is what inspired this Chicken Broccoli Macaroni and Cheese recipe. The entire family loved it!
Chicken Broccoli Macaroni and Cheese

First, cut up your chicken breast and toss in a skillet with your choice of seasoning. I used garlic and onion powder. You can also grill your chicken if you prefer. While your chicken is cooking, let your pasta boil on a back burner.
I used a little bit of flour to thicken my sauce. I mixed the flour with my butter and added my cream cheese to melt.
I used a bag of frozen broccoli but you can also dice up fresh florets. I did not steam my frozen broccoli before adding to my skillet. It gets heated up plenty between the skillet and oven. Add your fully cooked chicken to your mix.
Now to add the cheddar taste we all love, pour in a can of Ricos Gourmet Nacho Cheddar Cheese Sauce and stir together.
I appreciate finding ways to cut corners and make recipes easier. With a large family, we have several mouths to feed and not as much time to prep. That’s why I love using Ricos Gourmet Nacho Cheddar Cheese Sauce instead of hand shredding cheese and melting it. It saves me time and tastes great.
I found Ricos at my local Walmart store near the pasta sauce. They have so many other flavors I cannot wait to try, such as their Queso Blanco. I love me some white cheese! If you like spicy foods, try their Hot & Spicy Cheddar Sauce in place of the Gourmet Nacho in this recipe. That will give your macaroni and cheese a little kick.
Pour your cheese, chicken and broccoli mixture over your cooked pasta and put in the oven. Add a dash of salt and pepper to the top of your pasta dish.
Bake in the oven on 400º for 15-20 minutes.
This is the creamiest and cheesiest pasta! I loved it. I made enough to have leftovers for lunch the next day while I worked and I can’t wait to make it again. We are using the same mixture with rice instead of pasta to make our Broccoli Rice Casserole for Thanksgiving.
Chicken Broccoli Macaroni and Cheese

Ingredients
- 1 package pasta
- 1 can Ricos Gourmet Nacho Cheddar Cheese Sauce
- 2 chicken breasts
- 1 bag frozen broccoli
- 8 oz cream cheese
- 1/4 cup butter
- 2 cups milk
- 3 tbsp flour
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Bring a pot of water to boil and cook your pasta.
- While pasta is boiling, dice and cook your chicken breasts on the stovetop.
- While chicken is cooking and pasta is boiling, start your sauce by melting butter in a skillet with your flour. Stir and cook for roughly one minute until smooth.
- Pour in your milk and cream cheese. Continue cooking until your cream cheese is melted and sauce is thickened.
- Add your frozen broccoli and cheese to your cheese sauce. Stir.
- Pour your can of Ricos Gourmet Nacho Cheddar Cheese Sauce into your chicken and broccoli mixture.
- Layer your pasta in your casserole dish. Pour your cheesy chicken over your pasta.
- Season with salt and pepper.
- Preheat oven and bake on 400º for 15-20 minutes.
- Stir and serve. Enjoy!
