Baked Parmesan Herb Tomatoes

We love entertaining for the holidays. This week we had my childhood best friend come over with her daughter for dinner and gift exchange. The girls love it when we have a sleepover. With the busy holiday season, we decided to keep dinner simple and quick. Along with our Red Baron Pizza and Coca-ColaTM, we made Baked Parmesan Herb Tomatoes. Print the full recipe below.

Baked Parmesan Herb Tomatoes

First, gather your ingredients. You may have the dried herbs in your spice cabinet already. You can use sliced parmesan cheese, grated or shredded. I picked up a bag of shredded parmesan cheese at Albertsons when buying the rest of our dinner. 

Both the Red Baron pizza and your tomatoes will bake at 400 degrees. This makes it really easy to prepare dinner. The Red Baron pizza box called for 14-17 minutes and the Baked Parmesan Herb Tomatoes takes roughly ten minutes, so set your timer accordingly.

These Baked Parmesan Herb Tomatoes were so yummy. They are bursting with all the same flavors that can be found in your pizza. Which makes pairing with Red Baron perfect. Don’t forget your ice-cold Coca-Cola! We picked up a six-pack of the traditional glass bottles which are my favorite.

Baked Parmesan Herb Tomatoes

Baked Parmesan Herb Tomatoes

Ingredients

  • 3 tomatoes
  • 1 cup parmesan cheese
  • 1/2 tbsp oregano, dried
  • 1/2 tbsp basil, dried
  • parsley, garnish

Instructions

  1. Cut each tomato into three 1/2 inch slices. Lay tomato slices on a baking sheet or in a casserole dish.
  2. Mix your dried herbs together evenly. Sprinkle over each tomato slice.
  3. Spread shredded parmesan cheese over the top of the herb covered tomatoes.
  4. Garnish each tomato with fresh parsley.
  5. Bake in oven at 400 degrees for ten minutes, until cheese is melted and bubbling.
