Can you believe summer is almost over? My kids start back to school on August 16th. We anticipate very busy schedules this year so we are already starting to plan for the upcoming school year by shopping at Walmart. One thing we make a priority during the school year is packing lunches daily. Sandwiches each day can get old quick, so we are always looking for fresh ideas. These Quick & Easy Chicken Salad Pinwheels are a big hit among all of our kids.

To start you need to toss together the chicken salad that you’ll be using in your pinwheels.

Quick & Easy Chicken Salad Pinwheels Ingredients

  • 1 can of Swanson® Premium Chicken
  • 2 tablespoons of pickle relish
  • 3 tablespoons of mayo
  • Flour tortillas

Once you open the can of Swanson® Premium Chicken you’ll want to shred the chunks finely. This can be done quickly using a fork.

Since Swanson® Premium Chicken is already cooked and ready to use for quick and everyday meals, it is perfect for our quick & easy chicken salad. It is a great way to get a low fat and heart healthy meal made for school lunches.

Now mix together your pickle relish and mayo until it is evenly distributed throughout your chicken.

In our regular chicken salad we add grapes, apples and celery. However, with this version we keep it simple since we are rolling it into pinwheels. You don’t want large chunks to keep it from rolling tight.

Quick Tip: I use a rolling pin to flatten the flour tortilla as much as possible. This also helps even it out if there are any thicker areas on the tortilla.

Spread your chicken salad across your tortilla, avoiding the last inch of one side. Start rolling from the side of the tortilla where the chicken salad comes to the edge.

Roll tight without pushing the chicken salad out.

Wrap your rolled chicken salad filled tortilla and place in the refrigerator. By allowing it to cool it will help hold the rolled tortilla in place. You can make these the night before school and let them chill overnight. Then before packing in their lunchbox you can unroll the wrap and slice into pinwheels.

  1. I think I’ll pack some of these delicious snacks in my lunch box too. Thanks for the tip about putting them in the fridge for a bit first before cutting. I probably would have forgotten to do that and ended up with chicken salad all over my cloths 😉
