Fresh Peach & Ginger Asian Salad – How to Celebrate Earth Day

Earth Day is this coming Sunday, April 22nd. It is no secret that my entire family loves the outdoors. Besides camping and biking with my family, I also enjoy relaxing alone surrounded by Mother Nature. To unwind from a busy day I like to take a break and lay in my hammock. It is not uncommon for me to take my lunch outside along with my Kindle for a reading break or even work on my laptop from the comfort of my hammock.
I could eat a salad with every meal. My most recent salad obsession is dried cranberries. However, with each salad I always toss in fresh fruit. This recipe was inspired by the new Unsweet Peach Ginger Honest® Tea.
Fresh Peach & Ginger Asian Salad Ingredients
- Fresh peach – sliced or diced
- Mix of spring salad greens
- Roasted almonds and dried cranberries
- Asian Ginger Sesame salad dressing
Start by tossing all of your ingredients into a bowl. I love the spring mix salad greens but any spinach or lettuce will work. Next, add a small handful of the roasted almonds and dried cranberries. To bring out the peach flavor in the Peach Ginger Honest® Tea, I diced a fresh peach and added to my salad.
Finally, I drizzled my salad with an Asian Ginger Sesame salad dressing that I found in the organic market section of Kroger.

I mixed my entire lunch outside and enjoyed it from my hammock. Fresh and delicious.
I prefer unsweetened tea, therefore I was really happy to see the new Honest® Tea flavor – Unsweet Peach Ginger at my local Kroger.
I found the individual bottles of Honest® Tea in the cold single beverages aisle. They were on sale at my Kroger store for 4/$5. So of course, I stocked up. There is also an online digital coupon for $0.25 off a single Honest® Tea. You can use the coupon up to five times.
My daughter loves the Honey Green Tea Honest® Tea and the Pomegranate Blue Flavored Herbal Tea. She loves pomegranates! She likes the just a tad sweet taste. When my mom came to visit at Easter she took my second Peach Ginger Tea – guess I’ll be heading back to Kroger.
Honest® Tea are brewed with real tea leaves, just like you’d make at home. All flavors are organic and fair trade. Plus, there is no sugar added. Perfect reason to enjoy on Earth Day!
