North Pole Cinnamon Roll Pops

I love baking during the holidays. It’s the perfect time of the year to make lots of sweet treats and indulge with Christmas as an acceptable excuse! Plus, it makes the house smell yummy and the kids smile. Yesterday we made these North Pole treats: Cinnamon Roll Pops.
Cinnamon Roll Pops Supplies
- Pillsbury Grands! Cinnamon Rolls
- Icing
- Cinnamon – for sprinkling
- Sprinkles
- Decorative Straws – we used red and white stripes for the North Pole
As the oven was preheating to 350 degrees, I started unrolling the cinnamon roll dough that came in the Pillsbury package. To make your cinnamon roll pops you want to roll the dough into small bite size balls.
Some of the cinnamon will fall off and that’s okay. You can simply roll it back in or leave it out. There will be enough cinnamon in each bite to make it enjoyable and you will sprinkle some on the top for an extra taste.
The full size Pillsbury Grands! Cinnamon Rolls require baking for 25 minutes. Since these cinnamon roll pops are so much smaller, I watched the oven every 5-10 minutes until they were golden brown. I baked some of our bite size balls on a flat cookie sheet and tried some inside a mini muffin pan.
Once the cinnamon roll bites cool a little, you can add your sticks. I used red and white decorative paper straws, but you can also purchase lollipop sticks in the baking isle at Walmart.
I put the cinnamon roll icing in the microwave for a few seconds to get it nice and melted. This way I could easily roll the balls in the icing without it being too thick. Be careful, this will cause the icing to drip when you lift. Keep swirling and let the icing drip back in the bowl.
Now decorate the top of your cinnamon roll pops with a sprinkle of cinnamon. This gives a little extra flavor and makes it clear that the pops are mini cinnamon rolls.
Now add some sprinkles! Who doesn’t love sprinkles during the holidays? Heck, they go with baking year round.
To display our cinnamon roll pops we added them to some styrofoam in a basket. The styrofoam made it possible for them to stand and made a festive display for guests to grab one.
These cute little treats look like they came straight from the north pole!
