Christmas Morning Breakfast with Goldrich

Each Christmas morning the kids wake me up much too early to see what Santa delivered and to rip open their Christmas presents. After spending an hour or two together as a family going through the gifts, opening the boxes and putting batteries in toys – we finally drag ourselves into the kitchen to make breakfast.
This year I found some fun recipe ideas of making toast with an egg cooked in the middle in a random shape that I have been wanting to try. I dug out my Christmas cookie cutters and went to work on my new mission. You can see the example I was working from on Pinterest.
Unfortunately, it didn’t work very well.
The snowflake ended up looking like a flower and the top of the egg never fully cooked even with the skillet covered and on low. I think my issue was my toast was not thick enough.
Instead I decided to make omelets for the kids.
The Goldrich eggs have such a rich yolk that they make perfect omelets. I added a little milk to the eggs before pouring into the skillet.
I tossed the toast to the side and put the snowflake cookie cutter directly on my skillet. I kept the skillet on low so the egg didn’t burn on one side before having time to fully cook all the way through.
Just like when preparing a regular omelet, once it starts bubbling on top then it is ready to be flipped over. I flipped the entire cookie cutter with the egg in it since it was slightly cooked to the side. Once it was flipped over I slowly pushed the egg down and out the other end of the cookie cutter. As the egg cooked it shrunk a little in size so it easily fell out of the cookie cutter without breaking apart or sticking.
I made a second omelet the old fashion way and used my smaller cookie cutter to cut it into a snowflake shape. Wondering what the red specks of color are? Sprinkles, of course! My husband thought I was crazy adding sprinkles to eggs but come on… sprinkles make everything better! Haven’t you seen the movie Elf? Syrup and candy goes with all food. Plus it’s Christmastime. I also added shredded cheese.
