All Natural Gluten-Free Salsa and Enchiladas

The first two months after going gluten-free were brutal.  I felt like I was never going to find delicious foods that I was still able to eat.  I have come a long way in the last six months.  Preparing more meals at home and finding new brands that are gluten-free has worked wonders.  That is why when I was introduced to 505 Southwestern I was eager to give them a try.  Their salsas and sauces are all natural and gluten-free.  They sent my family several jars to sample.

I love chips and dip.  It is one of my weaknesses. I would rather snack on salty goodness than sweets any day.  I love foods with spice and a little kick.  I’m not real fond of super hot and mouth burning salsas.  That is why I absolutely LOVE the 505 Southwestern Honey Chipotle Salsa.  It was extremely rich in flavor.  Not too sweet, not too spicy and not too chunky.  It was the perfect mixture.  Andrew’s favorite was the 505 Southwestern Roasted Green Chile Sauce.  Although both salsas say they are medium in spiciness – the green chile sauce had a little more kick.  I’m sure it tasted spicier due to the fact it did not have the honey flavor sweetness.

The other jar of sauce they sent us was their 505 Southwestern Enchilada Sauce. Although our family usually prefers queso on top of our beef enchiladas or sour cream sauce on top of chicken enchiladas – the kids cleared their plates.  To make the entire meal gluten-free we simply used corn tortillas and corn chips that are registered as gluten-free by the brand.  The whole prep and cook time for dinner was under thirty minutes.  That’s my kind of family dinner night.  Quick and easy!

Ingredients:

  • Corn Tortillas
  • Ground Beef or Shredded Chicken
  • Shredded Cheese
  • Enchilada Sauce (I used 505 Southwestern Enchilada Sauce)
  • Garlic
  • Sea Salt
  • Pepper
  • Chives

Steps for Making Easy Enchiladas:

  • Cook the ground beef on the stove top
  • Once you drain the grease, season the meat to your taste
    • We added pepper, sea salt, garlic and chives
  • Warm the tortillas slightly
  • Mix just enough enchilada sauce in the meat to make it moist with flavor
  • Spoon meat/sauce mixture into tortilla and roll
  • Place rolled enchiladas in a baking dish
  • Cover the enchiladas with remaining sauce
  • Sprinkle shredded cheese on top of the sauce
  • Bake for 15-20 minutes, until cheese is melted

    1. Being gluten-free is not always easy. Angela, I think she would really enjoy this salsa and it’s at local HEB stores.

    1. Mango salsa sounds delicious. Have you tried strawberry salsa before? I was pleasantly surprised by it.

    1. I would too, Kristen. Well I take that back, I need to add in some Japanese food or rice every so often.

    1. I’m the same way, Dominique. I do not like big chunky salsa either. Kind of picky with my Mexican food.
