Instant Potato Soup Mix Recipe

With winter upon us it is time to pull out the soup recipes, although I eat soup year-round – especially potato soup. What I love about this instant potato soup recipe is I can make the mix in a batch and then prepare one bowl of soup for a quick lunch, instead of an entire pot of soup.

Ingredients

1 3/4 cups instant mashed potatoes
1 1/2 cups dry milk
2 tablespoons instant chicken bouillon
2 tablespoons dried minced onion
1 teaspoon dried parsley
1/2 teaspoon ground white pepper
1/4 teaspoon dried thyme
1/8 teaspoon curry powder
1 teaspoon seasoning salt

In a medium size bowl mix all of your ingredients together.

Stir until all of your dry seasonings are blended into the potato mix.

Once your potato soup mix has been stirred well, you can add the mixture to a mason jar for storage.

Instant Potato Soup Mix

You can prepare the entire jar of instant potato soup mix immediately, or make one bowl of soup at a time.

To prepare soup, combine 1/2 cup of potato soup mix with 1 cup of boiling water. Stir until smooth.

The kids love to add their favorite cheddar Goldfish® crackers to their potato soup. My daughter helps me prep dinner and she enjoyed crushing some Goldfish crackers with a spoon for a soup topping. When making her own bowl she easily crushed Goldfish crackers on top with just her fingers.

Goldfish® crackers make such a great snack for the kids that I purchase the larger cartons from Walmart. Although the cheddar flavor are the most popular in our home, we also purchase the pretzel Goldfish® crackers. I not only use the Goldfish crackers as soup toppings, I pack the snack in my kids’ lunch each day. My son usually grabs a small bag full before his soccer games as well.
