Omelet Stuffed Bell Peppers

I am Texas born and raised, so are my kids.  You have probably heard the saying that everything is bigger and better in Texas, it’s true.  No, really.  Most Texans are proud to be Texans.  So when I heard about Lone Star Eggs, I was eager to support locally sourced products.  Plus, these eggs are sold exclusively at Walmart which means I do not have to drive far to find them.

Breakfast was always a big part of making memories with my family.  From going out to eat early Saturday morning when I was a kid to having a big breakfast prepared by my aunt when we came to visit.  I was always taught that breakfast is the most important meal of the day – to kick off your day right.

However, I do love to use eggs in my favorite brownie mix too.

Omelet Stuffed Bell Peppers

Here in Texas we love our stuffed bell peppers.  To put a twist on the traditionally dinner recipe we decided to bake omelets inside the peppers.  A Texas sized omelet always includes bell peppers inside – so why not put the omelet inside them?

Ingredients

  • Bell Peppers – cut in half and cleaned
  • Lone Star Eggs
  • Hashbrowns
  • Shredded Cheese
  • Tomato – diced
  • Green Onion – chopped

How to Make Omelet Stuffed Bell Peppers

I used frozen hashbrowns inside our peppers.  Since I planned to bake the peppers to cook the eggs, I knew the frozen hashbrowns would have plenty of heat and cook time.

Line the inside of the peppers with the hashbrowns.

Sprinkle on your shredded cheese.

Now beat your eggs in a bowl, just as you would before pouring in a skillet to make a regular omelet.  But instead of putting in a skillet – pour the eggs into the peppers.

Pour slowly so the eggs do not run out.  My peppers were large enough for about one and a half eggs each.

I added the tomato and green onion to the very top.  If you prefer all of your ingredients to be mixed up, you could combine them in a bowl and pour at the same time.  This will provide a less layered omelet.

Now bake in the oven on 375 for about 35 minutes.  Cook time will vary depending on what ingredients you add inside your peppers and how much egg you place in each one.  Keep an eye on them so you do not burn your peppers.  Some browning on the edges is normal.

They are perfect for individual size servings.  Prep time took less than ten minutes.  You could even prep the ingredients the night before and place in the oven while everyone gets ready for school, then eat right before heading out the door.

They were delicious!  Add salt and pepper per taste.

  4. OMG!!! These were a big hit and awesome!! My husband said this is a keeper but asked me to Blanche the peppes for maybe 2 minutes before next time to soften them up more. I had very fresh crispy peppers so they were quite crunchy after 40 minutes but oh so good!
    I had some Southwestern Eggbeaters I needed to use up so I used them this time and they were great. The entire house smells so darn good whenever you bake peppers doesn’t it?
    This is a once or twice or more ?? a week For Sure and Breakfast, Lunch or Dinner option.
