I love the spring. Hosting friends and family for a very large Easter egg hunt is one of my highlights for the year. Our annual hunt includes over 500 eggs! We live on five acres so having family and friends over for cookouts and large gatherings is common. A spring gathering is not complete without some delicious treats. I whipped up these No Bake Strawberry Cheesecake Shooters that make the perfect individual size dessert.

No Bake Strawberry Cheesecake Shooters Ingredients

NILLA Wafer Pie Crust

  • 30 NILLA Wafers
  • 2 Tablespoons of sugar
  • 5 Tablespoons of butter, melted

No Bake Strawberry Cheesecake

  • 8oz strawberries, half of a store bought container of berries
  • 8oz heavy whipping cream
  • 3 Tablespoons of sugar
  • 8oz cream cheese, softened

I have been eating NILLA Wafers since I was a child. My grandmother used to host Easter each year for the entire family. There wasn’t a year that she skipped making banana pudding with NILLA Wafers. To keep the tradition I decided to use NILLA Wafers to create my crust.

No Bake Strawberry Cheesecake Shooters Recipe

First, you need to crush your NILLA Wafers to make the pie crust. I recruited my son to help by adding the NILLA Wafers to a closed plastic baggie and handing over the rolling pin.

Once your NILLA Wafers are crushed, mix in your melted butter and two tablespoons of sugar. As you mix your crust will start to clump.

Use a fork to push your crust into your dessert cups. I made each cup have about a quarter inch thick crust. The recipe made six dessert shooters.

After your crust is set, place your shooters in the refrigerator to cool. Since you are not baking your crust it will be more likely to crumble. Since this is not a pie we are cutting slices from, it works perfect. However, you want the crust to cool and thicken in place which takes about 20 minutes in the fridge.

Now it is time to whip together your strawberry cheesecake!

In a large bowl beat your softened cream cheese and one tablespoon of sugar together until creamy, set aside.

In a separate bowl beat heavy whipping cream and two tablespoons of sugar together until you get your whipped cream.

Fold whipped cream into your cream cheese mixture.

Puree your strawberries in a food processor or blender.

Now slowly fold your strawberry puree into your pie filling until it is all well blended.

Add small spoonfuls of your strawberry cheesecake filling to your dessert shooters. I wanted to layer my No Bake Strawberry Cheesecake Shooters by adding an extra layer of fresh sliced strawberries.

Depending on the size of your dessert cups you can add as many layers as you wish. I did two layers of strawberry cream cheese mixture.

After layering my dessert cups I placed them back in the refrigerator. The garnish and toppings should be added right before serving.

Before serving we added a dollop of whipped cream, a fresh strawberry slice and a NILLA Wafer.

If you plan to make a full size pie instead of shooters, you can purchase a pre-made NILLA Wafer pie shell at Walmart in place of making your own.

I love serving the mini dessert cups at large get-togethers since they are the perfect size and easy to grab and go. The cups can be tossed when finished.
