I wanted to put a spin on our classic snowball cookie recipe to celebrate the the newly released DVD/Blu-ray of Minions © 2015 Universal Studios. All rights reserved. You can make your Minions movie night extra special with these delicious blue treats.
Do not let the blue color fool you. These snowball cookies taste just as yummy blue as they do white.
- 1/2 cup confectioners sugar
- 2 cups all-purpose flour
- 1 cup chopped pecans
- 3/4 cup shortening
- 1/4 cup of margarine
- 2 teaspoons of vanilla extract
Once you have gathered everything you need to make your snowball cookies, you will start with the dry ingredients. First mix the confectioners sugar, flour and chopped pecans in a bowl. Then set it to the side.
In a separate bowl you will cream together the shortening and margarine. While you are working on this step, set your oven to preheat to 325 degrees. Once the shortening and margarine is creamed together nicely, add your vanilla extract for flavor.
Now pour your dry flour mixture into the bowl with the margarine and shortening. Mix thoroughly.
As your stir your dough mixture you may find clumps. I used my hands to really work the dough.
Roll/smash your dough into one inch balls.
Grease a cookie sheet and line out your dough balls for baking.
You will bake your snowball cookies for 20-25 minutes on 325 degrees in the oven.
They will turn a light golden brown color. Watch the bottom of your cookies to make sure they do not burn. Let them cool on a sheet of foil or cooling rack in your kitchen before the final step.
While your cookies cool, gather the rest of your ingredients.
- blue food coloring mist
- 1 cup of confectioners sugar
- yellow sugar/sprinkles (optional)
Since we wanted our snowball cookies to resemble minions, we added blue food coloring mist. It is so simple to spray on the cookies and does not alter the taste. Once you spray the color on, let them fully dry before rolling in sugar.
Usually you will roll your snowball cookies in confectioners sugar. To give another minion twist to our cookies we added yellow sugar to the mixture. This gave it a slight yellow sparkle.
Coat your cookies on all sides in the sugar mixture.
You can easily lay your cookies out on a serving tray or platter. I used a small cake stand to display ours. The kids couldn’t stop eating them!
