Grilled Chicken Pumpkin Marinara Recipe

It’s fall, which means pumpkin all around. This weekend we decided to try a new pumpkin pasta dish and the entire family loved it, even those that are not fond of pumpkin recipes. To create my pumpkin marinara sauce I added some fresh produce, pumpkin puree and herbs to Prego Farmers’ Market® Classic Marinara that I picked up at Walmart. Keep reading for the full recipe and instructions.
Grilled Chicken Pumpkin Marinara Ingredients
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 Tablespoon of fresh rosemary, chopped
- 1 Tablespoon of fresh sage, chopped
- 1/4 teaspoon of cinnamon
- 2 teaspoons of honey
- 1 jar of Prego Farmers’ Market® Classic Marinara
- 2 15oz cans of pumpkin puree
- 1 cup of water
- 1/2 cup of full-fat coconut milk
- sea salt & black pepper, to taste
- oil, for sautéing
- pasta
- chicken, grilled and sliced
Instructions
Cook pasta and set aside.
Dice and sauté onions in oil until they are soft.
Mince garlic cloves and sauté with onion an additional 2 minutes, stirring frequently.
As a base for my pumpkin marinara sauce I used Prego Farmers’ Market® Classic Marinara, which is made with the kind of ingredients that you would find at your local farmers’ market, like vine-ripened tomatoes, garlic, and basil.
I enhanced my sauce with fresh produce at Walmart. I picked up some garlic, onion, fresh rosemary and fresh sage.
As soon as you open the top you can smell the rich aroma and flavor. Made from farm fresh ingredients, picked at the peak of the season, the taste is amazing.
Add the Prego Farmers’ Market Classic Marinara sauce, pumpkin puree, honey, and water to your pan. Stir to evenly mix the onion and garlic.
Cook on medium heat until the sauce begins to simmer. Turn the heat to low and simmer for 10 minutes, stirring occasionally.
While the sauce simmers, chop your fresh rosemary and sage.
Add the full-fat coconut milk and ground cinnamon, stir to mix well.
Top your pumpkin marinara with your fresh chopped sage and rosemary. Stir to combine.
This pumpkin marinara sauce recipe makes a large batch. It’s served well over a bed of pasta with grilled chicken or on top of breaded chicken breast.
