Cheesy Zucchini Muffins Recipe
Our family loves zucchini. We grilled it, cook it over the stovetop, and now even bake it. These cheesy zucchini muffins are sure to be a hit in your home. Plus, they serve as another easy way to sneak some greens into your child’s diet.
Cheesy Zucchini Muffins Recipe
Gather the below ingredients and have the kids help you bake these cheesy zucchini muffins. They serve as the perfect after-school snack or a quick breakfast on-the-go. You can even pack them in your child’s lunchbox.
Ingredients
- 1 cup of zucchini, shredded
- 1 cup of milk
- 1/4 cup of butter, melted
- 2 large eggs
- 1 tsp. garlic powder
- 2 tsp. dill weed
- 1 1/2 cups of shredded sharp cheddar cheese
- 3 cups of flour
- 4 tsp. baking powder
- 1 tsp. baking soda
Directions
Preheat the oven to 350 degrees and spray a 12 count muffin tin with non-stick cooking spray.
Combine the flour, baking powder, baking soda, garlic powder and dill weed.
Add the shredded zucchini, milk, melted butter, eggs and shredded cheese to the dry mixture.
Gently stir to combine all ingredients together. The batter will be thick and lumpy.
Fill each muffin well about 3/4 full with batter.
Bake 20-25 minutes.
This sounds perfect with chilli, just right for fall! 🙂

It looks like the zucchini is shredded finely. Do you need to squeeze it dry or anything or have any issues with excess moisture from the squash?
I love the flavors of cheese and squash, so I’m sure we’ll thoroughly enjoy these muffins – and it’s great to “sneak” in some more vegetables with the meal. Thanks for sharing!
